We measure our work differently. Not by volume, but by the integrity of each ingredient and the care invested in every stage of production. Our breads undergo long, cold fermentation — 24 to 48 hours — because flavor cannot be rushed.
Our grocery selections follow the same standard. We partner with regional producers whenever possible and turn to national suppliers only when their standards match our own. If we wouldn't serve it to our guests, it doesn't reach our shelves.
